Ingredients

8 tbsp flat-leaf parsley, chopped

6 cloves garlic, crushed

2 cups black olives, stoned & halved

8 tbsp fresh basil leaves, shredded

2 green peppers, seeded & diced

2 onions, cut into chunks

1 kg Italian sausage, sliced

4 tbsp dried oregano

2 tbsp dried basil

8 tbsp olive oil

3 tins Italian tomatoes, diced

4 tbsp sugar

4 bay leaves
-
2 tsp salt

Eggs (quantity as desired)

Crumbled feta, for garnish
Instructions
Heat some oil over medium heat on a skottle and fry the onions, green peppers and sausages until browned.
Add all remaining ingredients and a tin of water.
Reduce, stirring occasionally until thickened.
Break eggs carefully in sauce, cover and cook until eggs are ready.
Sprinkle with crumbled feta, fresh parsley and basil.
