Hearty, vibrant, and full of Mediterranean flavor — this Napoletano Breakfast Skottle brings together the richness of Italian sausage with the freshness of basil, parsley, and green peppers. Juicy tomatoes and black olives create a savory, tangy base, while gently cooked eggs add a creamy, comforting finish. Sprinkled with crumbled feta and aromatic herbs, it’s a dish that feels rustic yet indulgent — perfect for a leisurely breakfast or a morning that calls for bold, flavorful starts.

Ingredients

  • 8 tbsp flat-leaf parsley, chopped

  • 6 cloves garlic, crushed

  • 2 cups black olives, stoned & halved

  • 8 tbsp fresh basil leaves, shredded

  • 2 green peppers, seeded & diced

  • 2 onions, cut into chunks

  • 1 kg Italian sausage, sliced

  • 4 tbsp dried oregano

  • 2 tbsp dried basil

  • 8 tbsp olive oil

  • 3 tins Italian tomatoes, diced

  • 4 tbsp sugar

  • 4 bay leaves

  • 2 tsp salt

  • Eggs (quantity as desired)

  • Crumbled feta, for garnish

Instructions

Heat some oil over medium heat on a skottle and fry the onions, green peppers and sausages until browned.

Add all remaining ingredients and a tin of water.

Reduce, stirring occasionally until thickened.

Break eggs carefully in sauce, cover and cook until eggs are ready.

Sprinkle with crumbled feta, fresh parsley and basil.
